The Monster Series is what happens when we let our minds run wild. Beers that are unharnessed and unhinged. The true manifestation of our motto: Limited batches and unlimited possibilities.


Teaming up with Eric Neely's art (2014 - 2016); SR Brant's art (2017 - 2018), Rachel Miles art (2019 - Present) and Jeff Neidt's creative writing. Not only are these amazing brews but they have a label that matches the beast that is the beer.


Night Falls Reserve (2019) Breckenridge Bourbon Barrel-Aged RIS (extended aging)

It’s only once in a blue moon we tap into our reserve release stash, but this holiday season we wanted to give you a special gift – something brewer Jem has been looking forward to for an entire year.  Instead of releasing all of our Bourbon Barrel Aged Night Falls for our 5th Anniversary we let some age in the same award-winning Breckenridge Bourbon barrels for an extra 6 months.  Well, the year-long wait is finally over and we present to you The Reserve Release! 


The extended rest filled this beer with an exquisitely rich and complex profile: expect heavier notes of oak, vanilla, and char, and a bit more of bourbon heat over the 5th anniversary release. Don’t worry, the same brown sugar and chocolate notes are still there to mingle perfectly with roasted malts and dark fruit flavors.

Belgian Tripel Belgian-Style Tripel

This holiday season we wanted to give you a special gift – a sneak peek at this year’s anniversary releases.  Brewer Blake has been looking forward to this beer all year, and couldn’t wait until June to release it.  So, here it is in all of its glory!  It’s not aged in red wine oak barrels like the anniversary beer, but instead aged on oak spirals.  You won’t be disappointed though, as all the elements of an amazing beer are here.

 

Unfiltered for maximum flavor (some settling is normal) and aromatic experiences, this beer hits the nose with a lively, effervescent sensation and pleasant fruit & spice fragrance.   The yeast produces hints of banana and coriander while the Belgian malts give a perfect medium-light body & subtle SWEETNESS. Complement those complex flavors with a hint of oak and you have this masterpiece. 2019 Release! A beer so big, so bold, so dream-inducing, we only dare brew it once a year. It’s an absolute monster and is sure to leave you walking around in a daze asking: What. Was. That? Cause it was amazing. And I want another. This is as balanced as a Triple IPA can get. Expect some sweetness from golden promise, light and dark crystal malts, and 7.5lbs/BBL of local Basswood honey. But don’t worry. This is a hop monster, ready to smash you with passion fruit, citrus, pine and spicy floral. Like the secrets in your closet, the alcohol is there, but nicely hidden.

 

If you buy a bottle, keep it cold and drink it ASAP. Seriously. Like as soon as you’re home. Aging is not kind to all those hops.

Sometimes you need to face your fears to discover the best things in life. We were a bit scared to put our amazing Double Chocolate Milk Stout into a Nicaraguan Rum barrel. But we knew the results could be worth the risk. We spent many nights worrying – 7 months worth to be exact.  But the resulting beer is anything but terrifying. Expect a full, thick body that coats the mouth, big chocolate, vanilla, and roasty flavors, and a bit of rum heat. It’s what our dreams are made of.

Terror Falls (2019) Bourbon Barrel-Aged Russian Imp. Milk stout

How do you properly celebrate five years of sharing great beer with great people (YOU!)?  The only way we know how – with another amazing beer! Behold, “Terror Falls” – a blend of our annual Night Falls Russian Imp. Stout & Night Terror Double Chocolate Milk Stout.  To make these behemoth beers play nice together our generous friends at Pub 819 lent us a Knob Creek Single Barrel Select Bourbon Barrel. We blended the two beers and forced them to rest in oak & bourbon bliss until they were the best of friends – which took 6 grueling months.  These newfound besties create a divinely deep and complex brew with the best characteristics of each shining through.  Expect notes of vanilla, oak, brown sugar, chocolate, char, and a bit of bourbon heat which balance perfectly with the roasted malt and dark fruit flavors.

Tequila Barrel Aged Emily's Dream (2019) Sea Salt and Lime Tequila Barrel-Aged Sour Ale

Ever since we created the first sour beer in our Emily’s dream series, we knew we were creating something special. For our 5th Anniversary we wanted to take Emily’s dream to a whole new dimension. But creating such a special beer was no easy task. We started with our standard series kettle sour. From there things got interesting. We aged this beer in Tequila barrels and pitched a fresh active culture. Then we added a bit of lime and sea salt for that authentic Tequila experience. With the help of time and a bit of patience, this beer became everything we dreamed of.

 

What should you expect out of this beer? Everything margarita – citrus, sweet, and sour all at the same time. The addition of sea salt cuts down on the bitterness of the lime while accentuating the sweet and sour characteristics. Bright citrus overtones shine through and meld perfectly with the hint of tequila from resting in barrels. It is both refreshing and complex. A perfect celebration of the past five years and many more to come.
 

Belgian Tripel (2019) French Red Wine Barrel-Aged Belgian Tripel

This year we wanted to make something extra special for our anniversary. inspiration struck while gazing upon our last bottle of first anniversary Belgian tripel.  But the exact same beer wasn’t good enough.  So we gathered all of the wisdom we’ve gained in the past five years and tweaked the recipe to make it the best Belgian we’ve ever produced.  We used the finest Belgian malts, the best strain of Belgian yeast, & we ageD it in the finest French oak red wine barrels available.  Then we waited. And waited.  And waited some more.  In fact, we waited for 6 whole months. 

 

The result was nothing short of perfection.  This beer hits the nose with a lively, effervescent sensation and a pleasant fruit, spice, & wine aroma.  Once it hits your lips you’ll know it was worth the wait.  The yeast produces hints of banana and coriander while the Belgian malts give a perfect medium-light body & subtle sweetness.  And don’t forget the barrels – they add a delicate kiss of red wine with A touch of smooth oak.  This beer is complex, so sip slowly and enjoy the evolution of flavors unlike anything you’ve  experienced before.

Tropical Passion Milkshake IPA IPA with Mango, Passion Fruit, Pineapple, Peach, Vanilla, and Lactose

Looking for a juice bomb smoothie/Milkshake IPA with tons of fruitty goodness? You’ve got it! To make it, Jem didn’t hold back on pulling the best goodies out of our hop cooler or fruit stash. Ridiculous amounts of Cryo® Citra® & Cryo® Ekuanot® Hops along with Mosaic®, Huell Mellon and Galaxy hops create a brew bursting with tropical fruit, passion fruit, stone fruit, citrus, and melon. If that wasn't enough we used a pound per gallon of mango, passion fruit, peach, and pineapple puree. Throw all of this together with lactose and vanilla... The result is a semi-sweet fruit explosion!

This is as balanced as a Triple IPA can get. Expect some sweetness from golden promise, light and dark crystal malts, and 120lbs of local Basswood honey. But don’t worry. This is a hop monster, ready to smash you with passion fruit, citrus, pine and spicy floral. Like the secrets in your closet, the alcohol is there, but nicely hidden.

Our Emily’s Dream series is an opportunity to explore the depths of flavor a beer can become. Like the most interesting dreams, you don’t know what may become, but you’re excited for the journey. For our 4th Anniversary, we departed from the norm on our typical kettle-sour process. After brewing Night Falls in early 2017, we did a second runnings to grab the fermentable wort used to create Emily’s Dream #11. We then fermented the beer in barrels with yeast and a whole lot of souring goodness.

 

Such a long barrel maturation lends a depth and complexity unlike any sour we’ve ever done. It’s funky. It’s tart. And there’s big ole’ oaky finish worthy of the Woodsmen from the story that inspired the bottle art. We added a grip of blackberries at the end for the unexpected twist that makes the best dreams worth having.

Night Terror 2018 (Barrel Aged)

For our 4th Anniversary we wanted to show you, dear friend, some love. There is no better way than with our Night Terror barrel-aged double chocolate milk stout! The black-as-night beauty is pretty much an aphro-beer-siac.

 

Rich and complex, you can expect notes of vanilla, toffee, chocolate, and candied fruit. And because every celebration is made better by good whiskey, we aged the beer in a Maker’s Mark barrel donated by Tim Koupal and a J. Carver Rye Barrel donated by John Wetter for some added love. Blending these barrels together over a pile of cacao nibs creates a beer that’s truly worth celebrating.

Hazy Dream

Looking for a juice bomb of a New England Style IPA? You’ve got it! To make it, we didn’t hold back on pulling the best goodies out of our hop cooler. Ridiculous amounts of Citra®, Mosaic® and Galaxy hops create a brew bursting with tropical fruit, grapefruit, citrus, and melon. 

Are we sleeping in our dream or dreaming in our sleep? It is too hard to tell when flavors hit this deep. How’d we Dream up this recipe? Well, lets just say things got a little hazy... again. One thing is for certain. This beer is intensely juicy. 

Best of all, we toned down the strength so you can have a few. So go ahead, enjoy, and dream away.

Creative Juices

From Warhol and Basquiat to Queen and David Bowie, nothing gets the creative juices flowing like an amazing collaboration. That’s why we worked with local home brewing supply store, Brew & Grow, to dream up this juice bomb of a New England Style IIPA.

 

How’d we decide on a recipe? Well, lets just say things got a little hazy. This beer is intensely juicy. Seriously, bring a towel. Bursting with tropical fruit, passion fruit, citrus, and melon thanks to ridiculous amounts of Citra® and Galaxy hops, this beer will delight the senses.

Cranberry Brackett 

Release Date: December, 2017, #of bottles released - 1008

Brackett, Braggot, Bragawd, however you spell it, this is one of the world's oldest beer styles traditionally brewed with a mix of honey and malt. We used 2-Row malted barley and 240lbs of local MN honey as our traditional base. Then, our creativity took over.

 

We're always asking ourselves, "What boundaries can we push? What flavors can we experiment with? So, we added 200lbs of fresh cranberries to the boil. The cranberries lend a unique tartness and pucker that plays well with the candied sweetness of the honey. This is truly a one of a kind beer made for truly one of a kind people. REM (2017) BA English-Style Barleywine

Brasher than a monster on the loose. More brazen than an werewolf howling at the moon.


To make our Real English Monster, we brewed the strongest beer we can legally make in our facility. Then we took the amber-hued nectar and let it chill out in two different whiskey barrels. But far from taming this beast, it only made it more delicious.


By combining the barrels, this 12% ABV monster of a beer has a complexity unlike anything you’ve experienced. Earthier than typical barleywines, you’ll pick up loads of heat and barrel flavor. Expect smooth Bourbon, toasted coconut, sweet molasses, and defined oak as you confront this boozy monster. But beware, it might leave you howling at the moon.

Aged for 8 months in Buffalo Trace Single Barrel Select Bourbon Barrels from our amazing friends at Bacchus Wine & Spirits, expect big bourbon flavor, a defined hop presence, and notes of nuts and berries. More than just a beer, this is a story about committing to what you love and enjoying your own unending journey toward happiness.

Zombie Sleepwalker BA Triple Black IPA

Release Date: June 4, 2017, #of bottles released - 622

You thought you loved our Sleepwalker before, but just wait until you see how it comes back to life as a barrel-aged Black IIIPA. This beer returns to IPA’s historical roots, where it was often shipped in barrels to survive the long journey.

 

But that’s about all that’s traditional. The special dark malts combine with west coast hops for a deep, onyx color and dank flavor. Then we let this monster rest in select bourbon barrels. When it springs back to life, we dry hop it with enough Centennial and Cascade hops to gnaw on even the most ardent hop head.

The barrel time fills this beer with an even more rich and complex profile. Expect loads of boozy vanilla and toffee to mingle with roasted malt and dark fruits. As you drink this beer, we ask that you take some time to reflect on the memories we’ve shared and look forward to the good times to come.

World Traveler

Costa Rican Cold Press Coffee Stout

Since our founding, we have been about pursuing life-changing experiences. Sometimes you have to venture out into to the world to broaden your horizons. That’s why our first collaboration brew took us to Central America to create a beer that combines native ingredients with worldly influences.
 
After a long, treacherous journey through multiple lobbies, navigating rivers of ticket lines, and enduring hours of screaming babies, we finally met up with our friends at Hoppy Ideas Brewing Co and Las Olas Brewing. We collaborated to unlock the secret of melding Costa Rican coffee with a silky smooth American stout. Back in Minnesota, we used our newfound techniques and 25 pounds of Costa Rican coffee to recreate the tropical experience. The beer bursts with smooth, roasted coffee and chocolate. We hope it inspires you to broaden your own horizons. As they say in Costa Rica, a cachete!

Think all politics is just monsters butting heads in grandiose posturing? Does election season make you need a drink? We’ve got the beer for you. Our RAM takes the best of American ingenuity and runs wild. This two-headed monster hits you with a one-two punch of malty booze and citrusy hops. It’s complex, brash, and strong as hell. Kind of like this country of ours.


After brewing, we stowed the beer away in a combo of whiskey barrels. Because booze! The barrels lend some ripe plum and cherry, with hints of spice, caramel, and vanilla to keep it interesting. It’s good now, but best aged until after the election or after. You might need it then. And vote! Nothing’s worse than being consumed by a monster you had a chance to fight but did nothing about.

A beer so big, so bold, so dream-inducing, we only dare brew it once a year. It’s an absolute monster at 11.5%, and is sure to leave you walking around in a daze asking: What. Was. That? Cause it was amazing. And I want another.


This is as balanced as a Triple IPA can get. Expect some sweetness from golden promise, light and dark crystal malts, and 120lbs of local Basswood honey. But don’t worry. This is a hop monster, ready to smash you with passion fruit, citrus, pine and spicy floral. Like the secrets in your closet, the alcohol is there, but nicely hidden. Keep it cold and drink it ASAP. Seriously. Like as soon as you’re home. Aging is not kind to all those hops.

Australia is a badass place, so of course it deserves a badass beer. This beer’s more Australian than Paul Hogan carrying a koala while riding around in a kangaroo pouch. Premium all-Australia malt from Joe White Maltings™ and all Australian Galaxy™ hops. It’s a high, hard Crikey to the face, bursting with grapefruit, pine, and Aussie beauty. But be careful, at 8.2%, this lil’ Sheila will quickly have you saying G’Day, G’Afternoon, and G’Night.

We’re entering our terrible twos. As a thank you to all of you—the drinkers, the workers, and the partners—we wanted a beer that doubled down on last year.  So we put our boldest, brashest Night Falls Russian Imperial Stout to rest for seven months in a variety of whiskey barrels. We kept each barrel separate, so you can taste the unique characteristics of each barrel. We hope you enjoy the beer as much as we’ve enjoyed your support.


It’s good now, but best aged until December 2016 or longer. Try to be patient. It’s worth the wait.

Emily's Dream #6

Now she’s sprung out. Full of tart, tang, and sass, she brings all the funk you’d expect from a barrel-aged sour. We hope you find it worth the wait.

Grapefruit Sour Ale

The 8th warped offering in our Emily’s Dream series makes you feel small compared to its enormous flavor. We start with the conventional witbier ingredients—white wheat, pale malt, coriander, bitter orange, and belgian yeast. But we don’t much like conventions.

So we kettle-sour the beer with lactobacillus delbrueckii. Then age the straw-hued dream on grapefruit for an added citrus wallop. It’s a palate-shocker. Tart and tangy, with sharp nettles from the belgian yeast. After this, we think you’ll agree conventions are for Vegas conference rooms. Beer is for us.

Like the others in the Emily’s Dream series, we kettle-sour the beer using exclusively lactobacillus delbrueckii. The addition of fresh peaches makes the beer refreshing and infinitely drinkable. It’s a lil bit sweet, a lil bit tart, and a whole lot of delicious. So pour yourself a glass and start dreaming of spring.

REM (Real English Monster) 

English-Style Whiskey Barrel Aged Barleywine

Brasher than a Beefeater on watch. More brazen than an English hooligan after a loss. 

To make our Real English Monster, we brewed the strongest beer we can legally make in our facility. Then we took amber-hued nectar and let it chill out in a combination of 6 different whiskey barrels compliments of Ace Spirits in Hopkins (We really couldn't have done it without them!). But far from taming this beast, it only made it more delicious.

After combining the barrels, this 12% ABV, monster of a beer has a complexity unlike anything you’ve experienced. Drier and earthier than typical barleywines, you’ll pick up more heat and barrel flavor. Expect spicy rye, toasted coconut, sweet molasses and smooth oak as you confront this boozy monster. It’s good now, but best aged until April 2016 or longer. Be patient. It’s worth the wait.

Emily's Dream #5 

Whiskey Barrel Aged Sour Stout

The fifth warped offering in the Emily’s Dream series starts off conventional enough. Pale American, UK chocolate, and Crystal malt sounds like another stout. Then things go down the rabbit hole pretty quickly.

We kettle-sour the beer using exclusively lactobacillus delbrueckii and toss in some Ecuadorian cacao nibs. Then barrel-age the beer in whiskey barrels. It’s acidic and tart, with a nose that will make wonder what the funk is that? It’s unlike anything you’ve ever experienced. Because when the monsters of our minds find their way out to play, nothing holds them back.
